Perfect Papusas!
 

Papusas are fun to make, incredibly tasty, and rooted in rich Salvadoran tradition! Whether you're a foodie, a culture lover, or just someone who enjoys hands-on cooking, this class is your chance to roll, stuff, and cook your way into a new favorite dish.

In this workshop, you’ll learn how to make authentic pupusa dough and fill it with delicious options like cheese, beans, and chicken. You’ll get plenty of practice shaping your own pupusas — with guidance every step of the way.

We’ll also whip up the classic accompaniments: Curtido (a tangy Salvadoran cabbage slaw) and Salsa Roja, with opportunities to assist if you’d like to dive in even more.

What’s on the menu:

  • Crème Brûlée – Learn to make a base that is easily flavored, how to bake it until it’s set perfectly, and then use a kitchen torch to create the beautiful burn on top that cracks perfectly when it’s time to enjoy.

  • Panna Cotta – Learn to make this simple custard that sets perfectly in the cold. We will layer multiple flavors in a unique way that not only tastes great but also looks beautiful.

  • Crème Anglaise – This is the base for ice cream! We’ll learn to cook the custard properly and to the right consistency. Then we’ll flavor and churn it into ice cream.

  • Pastry Cream – We’ll make a thick pudding that’s used to fill delicious sweets such as cream puffs and eclairs.

  • Fillings (You Pick!) – Students will choose three fillings in advance from a curated list of seasonal and classic flavors. Whether you love fruit, custard, nuts, or chocolate, there’s something for everyone.

Flavor options include:
– Apple Cranberry
– Pumpkin
– Bourbon Walnut
– Coconut Cream
– Caramel Pear
– Maple Pecan
– French Silk
– Key Lime

This is a fully hands-on class, and you’ll make all three pies from start to finish—including crust, filling, and finishing touches. A light lunch will be provided during a midday break.

Important notes:

  • Students must bring three pie dishes or tins from home (standard 9-inch size recommended).

Light, crisp, chewy, and oh-so-pretty—French macarons are the ultimate baking flex. In this 3.5-hour class, join pastry chef Shanna Avila of Crumbs & Crumbles Bakery as you demystify the macaron and learn how to make these colorful sandwich cookies from scratch.

What’s on the menu:

  • Macaron Shells – We’ll walk through each step of the macaron-making process—from whipping the meringue to folding the batter just right and getting those signature “feet” during baking.

  • Fillings – Once your shells are baked, you’ll learn to fill them with delicious buttercreams, ganaches, or jams, and assemble them into bakery-worthy treats.

  • Tips, Troubleshooting & Decorating – Learn how to avoid hollow shells, cracked tops, and other common issues. We’ll also have fun with colors and presentation so your macarons look as good as they taste.

By the end of class, you’ll understand the key techniques and timing that make macarons work—and leave with your own box of beautiful cookies to show off and share (or not, we won’t judge).

What’s on the menu:
• Amaretti – These chewy Italian almond cookies are naturally gluten-free and packed with nutty, aromatic flavor. We’ll cover how to get the perfect texture and subtle crunch.
• Linzer Cookies – Buttery sandwich cookies filled with jam and dusted with powdered sugar. Learn to roll, cut, and build these delicate, eye-catching treats.
• Chocolate Tuiles – Thin, crisp cookies that are shaped while warm to create an elegant curve. These delicate wafers add a refined touch to any dessert plate.

Ready to take your macaron skills to the next level? In this festive 5-hour workshop, pastry chef Shanna Avila of Crumbs & Crumbles Bakery will guide returning macaron makers through a holiday-inspired deep dive into decorative piping, shaping, and flavoring—perfect for seasonal gift-giving or showing off at your next gathering.

What’s on the menu:

  • Classic Round Macaron – We'll start with one batch of the traditional round shape to revisit shell piping precision and perfect your filling technique.

  • Snowmen Macaron – Learn to pipe, stack, and decorate adorable snowman-shaped shells with fun seasonal touches.

  • Gingerbread Men Macaron – Use guided templates and specialized piping techniques to create macaron shells in this iconic holiday shape—complete with sweet decorating details.

  • Seasonal Fillings – Each batch will feature a festive flavor like peppermint ganache, eggnog buttercream, or spiced cranberry, paired with the shapes for maximum holiday cheer.

This workshop is designed for students who have previously taken a basic macaron class or are already familiar with macaronage and baking fundamentals. We will not focus on making the batter from scratch, but instead concentrate on piping technique, shaping, and design.

A light lunch will be provided during the midday break. You’ll leave with a generous box of showstopping holiday macarons and the skills to create festive designs for any occasion.
