Get ready to make a host of creamy, classy custards in this 2 hour class featuring all things dairy. Join pastry chef Shanna Avila of Crumbs & Crumbles Bakery as you learn to create thick cream bases that can be used in all kinds of different desserts.
What’s on the menu:
Crème Brulee – Learn to make a base that is easily flavored, how to bake it until it is set perfectly, and then use a kitchen torch to create the beautiful burn on top that cracks perfectly when it’s time to enjoy.
Panna Cotta – Learn to make this simple custard that sets perfectly in the cold. We will layer multiple flavors in a unique way that not only tastes great but also looks beautiful.
Crème Anglaise – This is the base for ice cream! We will learn to cook the custard properly and to the right consistency. We will then flavor and churn the ice cream.
Pastry Cream – We will make a thick pudding that is used to fill delicious sweets such as cream puffs and eclairs.
By the end of this class, you'll be ready to create creamy custards at home. Each menu item features a different technique and consistency. Students will have the confidence to take any custard recipe and make it their own.
