You’ll learn how to work with multiple components, how to plate with intention, and how to create a finished dessert that’s as beautiful as it is delicious.
What’s on the menu:
Chocolate Mousse Element Learn how to create a smooth, airy mousse that can be piped, quenelled, or molded. You’ll focus on temperature control, folding technique, and texture.
Coulis or Gel Component Prepare a bright, fruit-forward sauce or gel to add acidity and color contrast. You’ll explore reduction, straining, and clean, modern finishes.
Crisp or Crunch Element Add essential textural contrast by making a crumble and tuile. You’ll learn spread-thin baking techniques and how to achieve delicate, even browning.
Assembly & Plating Using your prepared components, you’ll compose a restaurant-style plated dessert. You’ll learn how to create focal points, use negative space, add height, and balance texture and flavor across the plate.
By the end of class, you’ll understand not just how to make individual dessert components, but how to think like a pastry chef—combining flavors, textures, and temperatures to create a polished, modern dessert. You’ll leave with the confidence to elevate your home baking into plated, fine-dining presentations.
This will be an interactive demonstration class and will last about 2.5 hours.
Everyone will receive a booklet with information from the class and a 10% off coupon to be used in the Nibblins store. Please see our FAQs for more information and the cancellation policy.
