We're not being mean, we're taking pasta to the next level!

It's so we can spend more time stuffing ravioli and making way cooler fillings!!  I mean, just take a look at this ravioli in progress...yes, that's from our last class!  We'll (quickly) make a basic pasta then a couple of seasonal fillings to stuff inside plus an easy technique for making these little darlngs so you won't need that extra ravioli maker! 

This two hour (VERY) hands-on class includes food, recipes, and complimentary wine pairings.

And, that is a picture from one of the many times we have made paella in our workshops...look delicious?  You bet it is! 

That classic Spanish rice dish that seems so complicated that you would never attempt it.  Well, those days are over.  We are going to tackle paella and when we're finished...you will, once again, wonder why you ever thought you couldn't do it! 

We also include a couple of small bites to go along with the paella just to round out the menu.

Who wants to learn about some new wines?!

If you do, then join us for the first of many wine class experiences with Sommelier Joe Breaux and his new online wine store, Bevio.

During this unique tasting and learning opportunity, you will experience and learn about 6 (six) wines from Argentina with small bites prepared by Chef Candace.

Over the past decade Argentina has evolved from a country not well known on the global wine scene to the New World’s fastest growing exporter of wines. The leading grape in Argentina in terms of reputation and quantity is Malbec, a Bordeaux variety imported to Argentina from France in the mid 19th century. Other red varieties produced in Argentina include Cabernet Sauvignon, Merlot, Bonarda (known as Charbono in its native Italy), Syrah, Tempranillo and Pinot Noir. Among white wines, the Argentinian wine region’s signature grape is Torrontés, which yields a floral, tropical-tasting wine. The country also produces Chardonnay, Sauvignon Blanc and Pinot Grigio.

Not to play favorites but this is one of my favorite classes...it's a flavor explosion and recipes you'll want to make over and over again! 

And, who doesn't love to get a little island love during the holidays when baby, it's cold outside.

In this class, we'll hop to the islands, mon, for a lil bit o' dis and a lil bit o' dat...cuz it's all kinds of Caribbean cooking and it's fresh and delicious. And, this a perfect time of year for Island food!

DINNER AND A MOVIE - FRIED GREEN TOMATOES
 

This is not just another Chef's Table...it's Dinner and A Movie with recipes inspired by the menu from Fried Green Tomatoes with a star-studded cast including, Kathy Bates, Jessica Tandy, Mary Stuart Masterson, and Mary Louise Parker.

The movie is from the book, Fried Green Tomatoes at The Whistle Stop Cafe and the food is rich and decadent and Southern.  Experience Chef Candace's cooking roots with exactly the kind of food that she grew up eating and learning about from her mother, Marjorie, a talented and intuitive home cook (in her own right).  She was the person who inspired Chef and from whom she inherited her cooking genes.

The menu will, of course, include fried green tomatoes along with an updated twist on all of Chef Candace's favorites...fried chicken, mashed potatoes, and fresh peach cobbler (Chef Candace canned Porter peaches from the last harvest just for this dinner!).

Six courses of All-American food with All-American wine pairings and by the end of January, who won't need a heart warming movie and meal cooked for you?
