 America has a love affair with Steakhouses.

Learn the techniques and professional tips used to recreate popular dishes from some of the most famous steakhouses in the country.

Skills and Techniques:

Purchasing, peeling, and deveining shrimp; wrapping shrimp in bacon; baking and broiling shrimp; flavoring a bottled BBQ sauce;stemming, seeding, and julienning a bell pepper; peeling and juilienning an onion; cracking black peppercorns; sautéing tenderloin tips; sautéing vegetables; creating a pan sauce; oven roasting; learning about cuts of steak; grilling steak; testing for doneness, resting, and slicing meat; par-cooking potatoes; caramelizing onions; preparing ramekins for cake; mealting chocolate; testing baked goods for doneness..

    Every guest will take home a HomeChef Cooking School apron and a set of recipes to continue the experience at home! This class includes one complementary tasting of wine for adults, 21 years of age and older. No outside alcohol will be allowed in our classes.

     Adult classes are designed for students 14 years of age or older. This is a “Hands On” - “In Kitchen” class that is set to run from 6 - 9 pm, due to the nature of these cooking classes there is a possibility that the class may run past 9 pm, but guests are welcome to leave at their discretion.

BAKING WORKSHOP: Italian Old World Breads
 


Welcome Master Bread Baker Michael Kalanty to the fully-equipped kitchen at Home Chef Cooking School.

For his first class, he’ll guide you through the secrets of making crusty Italian bread with a tender, chewy interior.

Join us for this hands-on class and get your hands right in the dough!

Good baking depends on understanding basic techniques.

Learn the art and science of baking in this comprehensive 3-hour workshop.

Whether you're a novice or a seasoned home baker,

you'll love expanding your bakeshop repertoire with these delicious, easy-to-follow recipes.


Skills and Techniques: Working with yeast; mixing dough; shaping and proofing; baking old world breads.

                                      Learning to work with Biga, the Italian starter.

 

 

      In class, students will work in teams of two to make the Pane di Como breads.

We will have the starter ready to go!


 


Recipes:

  •  Pane di Como--The airy, tender, crusty table bread from the Lake Como region in the North.

  •  Roasted Potato, Garlic, and Green Onion--Dinner Rolls or Burger Buns? You decide!

  •  Tender/chewy Semolina Bread with Golden Raisins and Fennel Seed. Savory and slightly sweet.

Drinking wine along with superfoods such as salmon, beans, nuts, and greens gives you a heaping helping of essential nutrients and power-packed antioxidants. In this groundbreaking workshop, students learn how to cook, eat, and drink their way to health!

Skills and Techniques:

Chopping fresh herbs and onions; mincing and sautéing garlic; making a vinaigrette; marinating onions; making a nut crust; pan-frying salmon; stove-to-oven method; testing fish for doneness; making a streusel topping with superfoods; making a wine reduction; working with vanilla beans; making a bouquet garni; making a flavorful poaching liquid and poaching fruit.

Recipes:

·         Spinach salad with Avocados, Marinated Red Onions and Cilantro-Lime Vinaigrette

·         Pecan-Crusted Salmon 

·         Twice-baked Sweet Potatoes

·         Sautéed Wild Mushrooms with Garlic

·        Honey-Poached Pears with Raspberry Sauce
