ITALIAN SEAFOOD DINNER
 

 Italians are passionate about family, food and fun. Almost every night, Italian families gather around the table to feast. We will take an Italian journey, along the way we will enjoy fish, shrimp, scallops, crab and other treasures from thesea. There is only one rule that must be observed in this dazzling, multi-course meal – no meat! Enjoy preparing and then indulging in this elaborate Italian banquet.

Skills and Techniques:

Identifying fresh seafood through appearance and aroma checking, cooking seafood and checking doneness, Cooking scallops perfectly every time, Cleaning, cutting and cooking squid (without overcooking), Cooking pasta perfectly with the proper amount of water Purging, scrubbing and cooking clams, Making a simple Italian clam sauce, Cleaning and working with fresh lump crabmeat, Blanching spinach, Stuffing fish, Making butter sauce, Crisping Greens, Making vinaigrette, Toasting nuts.

 

Recipes:

  • Assorted Seafood Salad (Insalata Frutti di Mare)
  • Crab and Spinach-Stuffed Flounder with Prosecco Saffron Butter Sauce
  • Salad of Arugula and Romaine
  • Antipasto of Grilled Eggplant, Roasted Red Peppers, Fresh Mozzarella and Olives with Bruschetta

 

Note: 

 

Every guest will take home a set of recipes to continue the experience at home! This class includes one complementary tasting of wine for adults, 21 years of age and older. No outside alcohol will be allowed in our classes.

Adult classes are designed for students 14 years of age or older. This is a “Hands On” - “In Kitchen” class that is set to run from 6 - 9 pm, due to the nature of these cooking classes there is a possibility that the class may run past 9 pm, but guests are welcome to leave at their discretion.

Smoked, fried, baked, or grilled, bacon is king. In "For the Love of Bacon" you will learn how easy it is to take these mouthwatering dishes to the next level by simply adding bacon.


Recipes:

·         Glazed Pancetta-Wrapped Shrimp

·         Bacon-Wrapped Tenderloin of Beef

·         Guanciale Mashed Potatoes

·         Sautéed Brussels Sprouts with Bacon and Sherry Vinaigrette

·         Chocolate Sponge Cupcake with Peanut Butter Mascarpone Mousse and Chocolate Covered Bacon
