Only thing I can recommend, because we loved it, is maybe more audience participation in the actual cooking process.

Thank you so much for everything! We enjoyed learning not only about how to cook authentic New Orleans cuisine but the history behind the food. You made us feel like we were family! But I WANT that praline recipe. My sister doesn't even like pralines but she loved yours. Can we order them online? Thanks again for making our visit to New Orleans memorable. You made my Mom's day. She loved that she reminded you of your grandma.

We really enjoyed the cooking class. The Gumbo was my favorite thing to eat the entire time I was in New Orleans! Thanks for all the helpful tips and for giving us printed recipes to take with us. We both need work on the roux, but we're still eager to practice.
